I wish I were a glass of white wine...

Because I’m fresh and at 8-12%, my ironic acidity is discreet and my citrus notes are more appealing than ever... My fragrance is seductive; move me gently until the temptation to savor me becomes irresistible. Search your encyclopedia of experiences: you’ll find the answer. Look at me and color assimilation will make you think of flowers, white fruit and clean sheets. Drink me in and relax. But don’t simplify my nature, there’s more to me than meets the eye. Discover my complexities and dare to indulge in more than just an aperitif with me. I go beyond primary aromas. When aged on my lees, I assume many other bouquets. In the barrel, I rest alongside the same lees that turned me into a wine. When your lips touch my glass, they’ll give you the sensation of a full mouthfeel and medium body. I’m an important wine: depending on how I’m aged, I’ll give you dried fruit, spices, a touch of toasted bread.

I’m very versatile: I can join you for starters, and I get along incredibly well with fish and all things exquisite. I can be anything you’d like me to be as long as you treat me with respect, savoring every aspect of my natural chemistry. Try me with cheese and I’ll surprise you, because you’ll realize that I’m more interesting than a red. Or get to know my sweet side, accompanied by a taste of foie. I promise you’ll find the contrast exciting. They say I’m short-lived, but this isn’t true. Give me some oak, and I’ll last much longer than a couple of years. I can be light or I can get all the way up to 13%. Everything depends on the hours of sunshine that transform my compounds into sugar, which then ferment in stainless steel. My color ranges from lemon yellow to gold, with gradual oxidation bringing out the highlights shimmering along my edges. When I’m young, I have a greenish hue but as the memory of my harvest grows distant, I take on the color of old gold. I’m racy (but never ill-spirited) and eager to pamper your taste buds, caressing, stirring them up with each sip. My gift to you is a day between March and April so you can seduce me... Or will I be the one to make you fall in love?

A Xarel·lo kiss with a touch of Sauvignon Blanc.
