The start of modern wine-making and oenology. Foreign stock varieties such as Cabernet Sauvignon and Chardonnay began to be planted.

A new white wine fermentation technique under controlled temperatures was introduced.

1980

A new phase in red wine production. There was more awareness of red wine production with improved fermentation processes, working with wine from stock of a more reduced and controlled yield per hectare. Oak ageing was perfected to emphasize the importance of the grape (organic) tannins above those from the wood.
